Our guest this month will be professor Heather Hallen-Adams, a professor at the University of Nebraska with a keen interest in food microbiology, molds and mycotoxins.  We're going to learn about the role of fungi in our own microbiota, and how we try to leverage these probiotics to limit fungal disease in humans.
