As the mushroom hunting season winds down, it’s a great time to thinking about preserving the remaining bounty to last through winter! In this small group, hands on workshop, MAW member and professional Forager and Chef Julian Fortu of Arcadia Venture will walk participants through various techniques for preserving mushrooms, whether wild or cultivated, including drying, freezing, pickling, and fermenting. Participants will get to make and take home a jar of mushroom pickles and semi-finished mushroom jerky to finish at home.
The workshop will take place at vegan restaurant sPACYcLOUd, owned by MAW member Tatiana Kolina. Stay on after the workshop and socialize with fellow MAW members over Eastern European, fungal forward food and drink!
